Banana Maca Cake
Combining work and looking after the kids, as well as maintaining a sugar free household, can be tricky if you don't have quick, tasty snacks to hand. We have a couple of banana cake recipes which we often turn to. This one below is not the sweetest tasting, but it is without doubt the quickest and healthiest - and the kids devour it as soon as it's out of the oven. Full of fibrous apple, maca powder (which is known to aid sleep and help balance hormones) as well as magnesium from the bananas, this cake is a nutritional winner.
1 cup of almond butter
2 ripe bananas
1 apple peeled and chopped
4 organic eggs
2 tbsp maca powder (or lecuma)
1 tsp cinnamon
1 tsp baking powder
1 tbsp apple cider vinegar (Biona is the best)
5 almonds, halved, for decoration
Heat the oven to 150 degrees and line a loaf tin with baking parchment. Then blend together the almond butter, banana, eggs, maca, baking powder and vinegar in a food processor. Spoon the batter into the loaf tin and sprinkle some almonds on top. Place in the oven for 45 minutes and then let it cool down in the tin before turning out.
