Anzac Biscuits

We took a large tin of these Anzac biscuits on arecent camping trip to East Sussex with 8 families. Persuading the kids to swap a sugar laden chocolate digestive for one of thesewas easy - and they weren’t disappointed!

Ingredients: 

100g desiccated coconut

100g oats

85g honey

60g pitted dates, chopped into little pieces

125 g white spelt flour

Pinch of salt

1/2 teaspoon of bicarbonate of soda

125g unsalted butter

Preheat the oven to 180 degrees and grease two baking trays.

Put the coconut, flour, dates, oats and salt into a big mixing bowl. Melt the honey and butter into a saucepan and stir it until smooth. Then addthe bicarbonate of soda with two tablespoons of boiling water. Add both mixtures together and stir until they're completely combined. 

Then make little balls of the mixture the size of a small plum and place on the trays. They do spread, so leave a space in between each of them. Before you put them in the oven, press the top of them with a fork to squash them down a bit.  Bake in the oven for 15 minutes until they are golden brown. 

Allow to cool down on a wire tray.
