Chocolate and Peanut Butter Frozen Nibbles
We don’t care if the clocks are going back and summer is but a distant memory, these ice cream style frozen banana treats are moreish all year round. I make double the recipe and still wish I’d made even more. We add peanut butter which works brilliantly, but if you have nut allergies in your household, they taste great without too. A super way to end a playdate lunch, whatever the weather.
3 large bananas
A jar of peanut butter(I use Meridian or Biona Peanut Butter Crunchy sugar free versions. We are crunchy fans , but smooth works just as well)
175g cacao butter
50ml maple syrup or rice syrup (if you want thebananas to taste slightly sweeter, use maple)
50ml raw cacao powder
A pinch of salt
First peel and chop the bananas into thick slices (4 per banana). Take the banana slices and stand them on their ends inside a tupperware container.
Then make your chocolate sauce. Place the coconut butter and cacao powder into a heatproof bowl and place over a pan of simmering water. Once melted add the maple syrup and stir together. You have to work quickly...with a knife, thickly spread some peanut butter over the tops of the bananas and then use a spoon to drizzle some of the melted chocolate on top of the peanut butter. It is messy but it should look messy!
They are now ready to be placed into the freezer for at leasttwo hours.
