Stewed Apple Mix
It feels so wonderful when the days get longer and a little bit warmer. The kids can't wait to get outside and get moving. So in the morning, it’s all about food that offers slow energy release and gives them a long lasting boost.
We like to start the day with this sugar free cooked apple recipe. It's gentle on the stomach, full of vitamin C and fibre, as well as being delicious. I cook a batch at least twice a week. GIve it a try. It'll help your children hang on to all that glorious springtime energy, without any dips or slumps.
6 organic apples (Cox or Braeburn are the best)
1/2 cup of water
1/2 cup of sultanas
2 tsp cinnamon
Core and peel the apples and chop them into small, evenly sized pieces. Put the apples into water with a squeeze of lemon juice to stop them browning. Place all the ingredients in a large covered pan and cook for about 15 minutes, stirring occassionally, until soft. The colour should be a russet brown.
We always batch cook this and freeze it on the same day in little pots. Serve on its own, with muesli, or with yoghurt, blueberries, almonds and a drizzle of honey.
