Sugar and Dairy Free Chocolate Brownies
How to battle through all the kids' viruses, coughs, colds and earaches is the number one topic among my friends this time of year. As well as not eating sugar, I double up on immunity boosting food and drinks. So ginger with everything, and as many greens as I possibly can get into them.
The wonderful sugar free elixirs byComvita such asWinter Wellness are also great butjust so expensive. And for pudding? Dense and gooey sugar free chocolate brownies. The cacao is the magic immune boosting ingredient.
2 cups of sifted white spelt flour
1 cup of cocoa powder
1 and a 1/2 tbsps baking powder
pinch of sea salt
1/2 cup of melted coconut oil
1 cup of maple syrup
1/2 cup of brown rice syrup
1/2 cup of rice milk
1 tbsp vanilla extract
1/2 cup of instant coffee
Heat the oven to 180 degrees. Grease and then line a brownie tin (or square tin) with baking paper. Mix the flour, cocoa, salt and baking powder together in a large mixing bowl. Then in another bowl whisk together the coconut oil, maple syrup, rice syrup, milk, vanilla and coffee. Pour the wet mixture into the dry and mix together gently.
Pour the brownie mixture into the baking tin and place in the oven for 30 minutes. When they're ready a skewer will come out more or less clean.
Allow to cool and then cut into squares... demolish!
